Menu Monday!

Are you looking for a Yummy way to put all of that FREE Pasta and Philadelphia Cooking Creme we bought last week at Kroger to good use?  Here's a great way...


This was tonight's dinner and it was SO Good!  The recipe came off the top of the Italian Cheese and Herb Cooking Creme.  It was very simple and easy and very Frugal.  The cost of this meal was about $5!  Pretty great to feed your whole family and even have left overs for around 5 bucks!  Here's the recipe:
Baked Penne
1/2 lb lean ground beef
1 container Italian Cheese and Herb Philly Cooking Creme
1/4 c each onion and green pepper
1 Jar Spaghetti Sauce
1 cup of Mozzarella Cheese (I actually used the whole bag, we LOVE cheese)
3 cups cooked penne pasta

Heat oven to 350.  Brown meat with onions and peppers in large skillet. Stir in spaghetti sauce, 3/4 c cooking creme and 1/2 c mozzarella; cook and stir 2-3 minutes.  Add pasta, mix lightly.  Spoon into a 2 qt casserole; top with remaining cooking creme and mozzarella. Cover.  Bake for 20 minutes or until heated through, uncovering after 15 minutes.  YUMMY!!!

So you know what I had tonight.  Here's a look at the upcoming week's menu:

Tuesday: Chicken strips, potatoes and corn
Wednesday:  Country Style Ribs, Pinto Beans, Corn Bread and Potatoes
Thursday:  Left overs :)
Friday:  Tacos, rice, beans and homemade chips :)

Thursday - Homemade Pizza and Salad
Friday - Out To Eat!!! :) :)

Menu Monday...On Tuesday!!


Sorry I'm late with the Menu Monday post.  For those of you who don't know, my mom was injured in a head on collision last Wednesday and my priority is ALWAYS family.  So, I have been spending a lot of time with her and trying to help her out.  Thank you all for bearing with me and I hope to be back on track with posting this week. 

So with that in mind, my menu went right out the window Wednesday afternoon.  But as I've said before, if you have a meal planned and have the ingredients to prepare it and other circumstances arise (such as your husband takes you out or a friend cooks you dinner :) then you can just transfer that meal to the next week.  Which will cut down on your grocery bill for that week!  Here is my meal PLAN for this week:

Monday: Chili, Sandwiches (I've had this planned for 2 weeks and finally got it made!)
Tuesday - Pork Chops, Baked Potatoes, Green Beans
Wednesday - Baked Spaghetti, Salad and Bread (another cary over meal)
Thursday - Leftovers or Sandwiches :)
Friday - Meatloaf, Mashed Potatoes and Corn

Menu Monday!

Here's my menu for the week of March 7 - 11.  I have transferred a couple of last weeks meals to this week since my lovely Mother-in-Law cooked dinner for us one night and I totally forgot that we were leaving to go out of town Friday night, so I didnt' have to cook 2 of my meals.  That is the beauty of meal planning...I already have the ingredients, so now I have two meals ready for this week :)

Monday - Fish Sandwiches, Baked French Fries, Mac n Cheese
Tuesday - Chili and grilled cheese
Wednesday - Crock Pot Chicken and Dressing, mashed potatoes and green beans
Thursday - Left overs or sandwiches :)
Friday - Spaghetti, salad and bread

I actually already have all the items needed to cook these meals, so I won't have to make a big shopping trip.  Just a few necessities will get me by.  Now it's your turn!  What's on your menu for this week?  Leave a comment with your menu and your name will be entered for a mini coupon organizer!
